I don't know the speeds for all the planes in game where these preset trimers start to take effect but a little experimentation will show you. Below 300 kph the plane will want to roll hard to the left, but around 300 kph the plane will start to counter the roll automatically. The majority of the 109 line, for example, is equipped with roll trim tabs of this type that are set to around 300 kph. The trick is they only work at a predefined speed. The trim tabs you reference are modeled in game, you can even see them on the planes that are equipped with them. You can, in cases where roll trim isn't adjustable, induce a bit of counter roll with the ruder which often can be trimmed, but this may cause increased drag and slower over all top speed.

All though the behavior you described could be linked to having the cold start future activated. Some planes have some screwy scripting in the startup sequence that will cause it to die at the end. I'm not really sure which plane you were in but that is of little consequence, except to why the engine dies.
